Cabernet Sauvignon is a perennial best seller; this Ou Kalant (old rascal) remains a firm favourite, outfoxing the others by combining New World ripe fruit flavours with Old World elegance and charm.

Tasting Note
Elegant aromas of dark cherries and chocolate, followed by cassis and red fruit flavours on the palate. Ends with silky tannins and a long smooth finish.

Fruit Source
From several dry-farmed vineyards in the Agter-Paarl area.
Terroir
Mostly Malmesbury Shale soils. Malmesbury Shale has good water retention and the high clay content imparts minerality and fresh acidity to the wines.
Vinification
Fermentation took place over 5 days in stainless steel tanks with regular pump-overs. Before the end of fermentation, the grapes were pressed and put back into tank for malolactic fermentation. Fined and filtered before bottling.
Maturation & Oaking
5% matured in new American oak barrels. 25% matured in older barrels. 12 months total.
